There are 2 main types of squash:
Summer which are usually harvested when the fruits are young, and the skin is soft and edible.
Winter varieties are harvested beginning in early fall, before first frost, and have a firmer skin that is not always edible but does extend their shelf life into the winter.
Sow in rows directly in the garden well after frost into warm soils. Sow summer squash seeds 1/2 to 1 in. deep, and 20 to 30 in. apart in rows that are 5 to 6 ft. apart, with winter squash spaced 30 or more inches apart in rows 6-8 ft. apart. Loose, organically rich, well-draining soil, in locations with full sun and good air circulation work best for all squash varieties.
