(Midseason) A small, yellow-fleshed heirloom, far superior to others for salads. Originally brought to this country by early German settlers. Tubers are long and finger-shaped, measuring about 1 in. in diameter and 2 to 4 in. in length. Yellow skin and flesh are uniquely flavored and delicious. Boil with skins on for best taste. Excellent fried.
