An unusual variety with excellent flavor. Just the thing for delicate sauces, cream soups and stews. Plump, flat-rounded bulbs have coppery-red outer skins that peel easily. Purple tinged white flesh has spicy, rich flavor, yet it is mild when cooked. Stores well.
