Also called "Sunchokes" because they are in the Sunflower family. Attractive 7 to 12' tall plants have multiple branches and 3" wide flower heads. The roots have an unusual nutty flavor with a water chestnut texture. Slice them to eat raw in salads or add to Asian dishes at the last minute of cooking. Cook like potatoes for a starch substitute - excellent diet food, with only 8 calories per 4-ounce serving. Grow and store like potatoes. We ship grade #1 tubers.
